School Lunches

Now that schoool has started I have to be thinking about what to eat for lunch.my school serves hot lunch, but obviously that is out of the question. On an normal day, I have a piece of buttered Udie's bread, some kind of fruit, meat(ham, pepperoni, chicken ect.), Gluteno brand pretzals, chips, and somtimes cookies. I like peppers, carrots cucumber and pickles.

Mom's point of view.

Hello, I'm Lenae, Jillian's mom.  Occasionally I will be guest posting here and sharing a parent's point of view.  Jillian began this blog to answer some of the questions she gets about Celiac Disease and living Gluten Free.  This is her blog so she selects the post topics but has agreed to let me share once in a while. 

When we received Jillian's Celiac diagnosis I had mixed emotions.  I was relieved to know what was wrong with her and how to fix it but overwhelmed at the prospect of providing a gluten free diet in a gluten loving world.  I still wonder how Jillian will make it through college without Pizza or Ramen noodles.  We try to focus on the day to day and enjoy our girl who is healthy.

When Jillian was diagnosed, our pediatrician, who's wife and step-daughter have CD, told me that CD is Jillian's disease and advised me to let her manage it.  That's great advice that I pass on to anyone I've talked to about having a kid go GF.  Jillian is in charge of managing her CD.  She reads labels, cooks meals and keeps herself healthy.  As her mom I am proud of her anyway but I am especially proud of how she handles being different from other kids with grace and joy.

Summer Vacation!

Our family just got back from vacation.  We actually went on two different trips with a week at home in between.  First we went to Illinois to visit our family.  I saw all of my grandparent and some cousins.  We stayed at a couple of different places.  We go to Illinois a couple of times a year, usually my mom packs a cooler and a larger Rubbermaid tub of my GF foods.  Since this is family, they know about my celiac disease but they don't eat GF everyday so we still have to bring food and cook while we are there.  The second trip was to Red River NM.  It was nice and cool in the mountains and we went with our good friends.  We stayed in a cabin the the mountains.  We froze several things to take with us and cooked most of our meals there. My mom found one restaurant in town that cooked steaks GF so we ate there twice.

Chelsea Clinton's Wedding Cake!

If you have seen the news for the last couple of days, you will know that Chelsea Clinton's wedding had a GF menu and she has a "gluten allergy"! When a famous person has an allergy, or is gluten free, more people are more aware!
